In this video we share how we make pierogies from scratch using cauliflower as the stuffing instead of potatoes. The entire recipe is 43 points but when split, it makes each pierogi 1.5 to 2 points each!! These pierogies can also be frozen and used for subsequent meals!


Points: 1.5 to 2 Points Per Pierogi


Ingredients:


Stuffing:

  • Cauliflower

  • Spinach

  • 1 Tbsp Minced Garlic

  • Parsley

  • Garlic Powder

  • Clubhouse Roasted Pepper & Garlic

  • Clubhouse Garlic Plus

  • 1/4 Cup Of Nordica Smooth Cottage Cheese (1 Point)

  • 1/2 Cup/60g Of Glabani Pizza Mozzarella Light (4 Points)

Dough (from Gourmet Magazine 2004):

  • 1 Egg

  • 3 Cups All Purpose Flour (36 Points)

  • 1 Cup of Water

  • 1 Tsp Salt

  • 2 Tsps of Olive Oil (2 Points)

Instructions:

Makes 38 pierogies


Dough:

Must sit for 1 hour

  1. Take 3 cups of flour and make a well (centre hole)

  2. In the center, add one large egg, 1 cup of water, 1 tsp of salt and 2 tsp of olive oil.

  3. Mix egg and water together and then incorporate the flour forming a dough. 

  4. Knead with hands on floured surface until well mixed.  

  5. Cover with a bowl and let rest for an hour.

Filling:

  1. Boil a head of cauliflower and then mash once soft. 

  2. Saute minced garlic and a few handfuls of  spinach until spinach is wilted.

  3. Add to mashed cauliflower. 

  4. Add ¼ cup mozzarella and ½ cup cottage cheese.

  5. Sprinkle Parsley flakes, garlic powder, roasted garlic and red pepper and garlic plus to taste.

Build Pierogies:

  1. Roll out dough with rolling pin

  2. Cut out rounds with a glass. 

  3. Fill each round with a spoonful of filling mixture. 

  4. Fold over the dough and pinch the edges.  

Boil Pierogies:

  1. Take shallow casserole and bring water to a boil.

  2. Drop pierogies in water.

  3. The pierogies will sink and will float to the top once cooked

  4. Once floating, let sit for 5 minutes. (You can freeze them at this point by carefully keeping them apart with plastic wrap or wax paper)  

Cook Pierogies:

  1. In a large frying pan, add 3 diced slices of turkey bacon, mushrooms, spinach and onions.

  2. Let cook for 3 minutes

  3. Add pierogies to mixture and cook until pierogi is golden than flip over to cook other side.
